
2016 O’Dwyer
Cabernet Sauvignon
The 2016 vintage was excellent – a fine example of benchmark Clare Valley Cabernet Sauvignon.
Hand picked grapes from 90 year old dry grown vines were used to craft this estate grown wine which was matured in French oak barriques for 24 months. The hand picked grapes were processed in small 2 tonne fermenters, hand punched and pressed using traditional wine making methods.
The age of the vines ensures balanced, low yielding Cabernet which has great varietal characters and definition. These varietal characters are prominent, with mulberry and red fruits, dusty tannins and subtle oak. An elegant style, with fine acid and longevity in the bottle. The wine is drinking well now but will benefit from careful cellaring.
